Cheap Is The New Classy

My family and I have been trying to eat better. Granted, we are not health nuts and we have a long way to go, but we have been trying to make small steps to not only eat healthier, but to also eat more in a way that is more sustainable. Amber and I are pretty adventurous in trying new things, but Jay is kind of set in his ways. So, I decided to sneak something healthy in a recent meal. 😉

I made this Chicken Tomato Alfredo recipe but, instead of chicken, I substituted Beyond Meat Lightly Seasoned Strips. Beyond Meat uses 100% plant based proteins instead of meat to help you create delicious meals that your family will love. If you will recall, I used Beyond Meat Feisty Crumbles to make some Vegetarian Nachos that my family loved. So, I had no doubt that they would really enjoy the “Chicken” Alfredo, as well.

Tomato Alfredo Recipe With Beyond Meat Lightly Seasoned Strips

For this Tomato Alfredo recipe I used my favorite Tomato Alfredo sauce, whole wheat angel hair pasta and Beyond Meat Lightly Seasoned Strips. It’s such an easy recipe. Just cook the noodles and “chicken” per package directions, heat up the Tomato Alfredo Sauce and plate. I topped each helping with a small scoop of Jalapeno Jack cheese and some Garlic Parmesan cheese. Yum!

My daughter generally picks chicken out of alfredo, and that is what she did this time, too. Jay ate it all, none the wiser {lol!} and I loved it as well. After we were through eating, I informed my family that they had just eaten Beyond Meat Lightly Seasoned Strips and not chicken. They had no idea. And, of course, Amber tried it then as she knew it wasn’t chicken then. And she really enjoyed her meal.

    The recipe sounds delicious with or without meat. Glad that your family enjoyed it so much. We try to eat vegetarian a couple of nights a week.

    I have never heard of this brand and I am a vegetarian! I use quorn which is probably quite similar and it is delicious. Your meal looked so tasty!
