Any of you who know me are aware of my obsession with The Office. It’s my favorite show of all time and I have enough merch in my house [including a MASSIVE collection of Funko Pops] to prove it. I can also find an Office quote [suitable or not] for any occasion. Try me. I don’t fancy myself a chef [I mean I can keep you alive…] and never thought I would see a recipe of mine in a cookbook but I have to admit, I do make a mean chili! So when the opportunity came up to submit my Slow Cooker Chili Recipe [originally posted on this blog in 2013] to Brian’s upcoming cookbook there was no way I would pass. How iconic is the “Kevin spilling the chili” scene? And now I get to be a small part of The Office history. What an honor! Below is the current recipe [I have made a couple edits over the past 10 years] and here is the link to the original.
Slow Cooker Chili Recipe: Featured In “Seriously Good Chili Cookbook” by Brian Baumgartner [Kevin from The Office]
Ingredients
3 lbs. of lean ground beef
One 28 oz. can stewed tomatoes
2 16 oz. cans dark red kidney beans
2 16 oz. cans light red kidney beans
1 purple onion, chopped
One 12 oz jar of hot banana pepper rings [add more if you want to spice it up]
Two packs of hot chili seasoning – or mild, if you’re scared 😉
Garnish: cheddar cheese cubes
Directions
- Brown the ground beef in a large skillet and drain the grease.
- Combine all ingredients into a large slow cooker, Do not drain the liquid from any of the ingredients. Stir the chili to get an even mixture.
- Cook on low for about 3-4 hours, depending on your slow cooker.
- After the chili is fully cooked, add some cubes of cheddar cheese and enjoy!
“Is somebody making soup?” No Creed, a whole lot of somebodies are making chili! And My Slow Cooker Chili recipe is featured in the Homestyle Chili section of the Seriously Good Chili Cookbook on pages 185 and 187. There are almost 200 tasty recipes in this collection, including “Kevin’s Famous Chili” on page 244. After receiving my copy of the cookbook, I made the Slow Cooker Cheesy Chicken Chili by Amanda Dorich on page 88 and it was amaaaaaazing and really easy to make. I can’t wait to make some more of these recipes!
The Seriously Good Chili Cookbook is loaded with fun facts and a brief history about chili. There is also a forward by Oscar Nuñez [Oscar Martinez on The Office]. After the cookbook’s release, Kenny and I went to Barnes & Noble to see if we could find it in the store. Kenny was first to locate the cookbook and bought me a copy as he said he wanted my first copy to be from him. Awww. So, that copy is the one that I use to cook from and the copy I received from the publisher autographed by Brian Baumgartner lives in my library safe with my other signed books. As Kevin would say, “Nice!”
