There is nothing quite like fresh vegetables in the summer. Often used in a salad or as a side accompaniment to a main dish, vegetables make the perfect accent to any meal. Whether you grow your own or buy them at your local farmer’s market, you just can’t beat the rich flavors inherent to this time of year. In honor of summer and Eat Your Veggies Day {today}, here are 10 delicious recipes featuring vegetables. Yum.

With summer and gardens growing a-plenty, if you don’t get all of your veggies today, you really have no one to blame but yourself. But how many vegetables should you eat daily? And just how colorful should your plate be for optimal health? Well, that really depends on your age, whether you are male or female, and your level of physical activity. On Sunday, we took Jay out for the day, to show our appreciation for how much he rocks. One of the places we stopped at was K&W Cafeteria. What does this have to do with this Eat Your Veggies Day post, you ask? The salad. Oh man, Jay and I both got their summer salad. It had cucumbers, tomatoes, onions, green peppers and a dressing of vinegar and oil. It was so good. With salads, you really don’t need all that razzmatazz. Just keep it simple.

Some of my favorite vegetables are potatoes, green beans, tomatoes {actually a fruit, but they will always be veggies in my heart}, onions, cucumbers, corn and Brussels Sprouts. I don’t get to eat Brussels sprouts nearly as often as I would like because I find that a lot of people don’t like them. I have no idea way. They are like tasty little cabbages {that look like lettuce} but WAY better tasting. I think I will try this recipe above to try to entice my family to eat more Brussels Sprouts. After all, everything is better with bacon, right?

I can’t say that I have ever tried edamame. I am not even 100% sure what that is, but I looked on Google and this is what it told me, for anyone else who may not be enlightened either..

Edamame or edamame bean is a preparation of immature soybeans in the pod, found in the cuisine of Taiwan, China, Japan, Indonesia and Hawaii. The pods are boiled or steamed and served with salt.

At any rate, I love avocado and think this recipe looks yummy. ๐Ÿ™‚

    We have a recipe that involves a lot of squash and zucchini. It’s the best. That corn salsa looks amazingly good!

      We always laugh at Jay when he eats corn on the cob because I eat mine neat, in straight lines and he eats his by taking random bites everywhere. By the time he is done, it looks like some crazed animal attacked his cob, lol!

      I love green bean casserole and make sure to make it at least around the holidays. No one else in my house likes it, though, so that is why I only make it then. When you are having to eat it yourself, it starts not to look so good after a while, lol.

      You definitely should. It’s interesting because, to me, it fills you up and has a texture similar to meat, but I imagine it is much better for you in certain respects. ๐Ÿ™‚
