It’s almost the coldest time of the year and you know what that means – comfort food! And we have a great recipe for you that will allow you to spend more time with loved ones and less in the kitchen. With very little manual prep and just a few hours in the slow cooker, this Meat Loaf Sandwich Recipe is sure to please.
The Best Meat Loaf Sandwich Recipe
First, you need to make the meatloaf.
You will need…
2 lbs lean ground beef {we substituted bear meat because we had that on hand}
1 10 oz can condensed tomato soup
2 onions, finely chopped
2 stalks celery, finely diced
2 cloves garlic, minced
1/4 cup finely chopped flat leaf parsley
1 tsp salt
1/2 tsp cracked black peppercorns
3 eggs, lightly beaten
1 1/2 cups fine dry bread crumbs
1 slow cooker liner – we recommend the Debbie Meyer Slow Cooker Liner
1 slow cooker – We recommend the 8 qt LUX 3-in-1 Multi-Cooker
How to prepare…
1. Line your slow cooker with the Debbie Meyer Slow Cooker Liner.
2. In a large bowl, combine all of the food ingredients and mix well.
3. Shape into a loaf. This doesn’t have to be perfect – mine sure wasn’t. Lol.
4. Cook on low for 8-10 hours or on high for 4 to 5 hours {we did high for 4.5 hours} and make absolutely certain it’s done. You can do this by using a meat thermometer and making sure that the center has reached 160 degrees Fahrenheit.
5. Grab the slow cooker liner and lift out the meat loaf, careful not to spill the juices or the meat loaf. If there is a lot of juice {there wasn’t in mine} you can put the slow cooker liner and meat loaf in a bowl and then lift the meat loaf out and put on a plate. Then tie up the slow cooker liner and let cool. Then discard.

The tasty meat loaf that you just made
Shredded Cheddar Cheese to taste
A couple slices of French Bread
Toaster Oven – We recommend the Panasonic Flash Xpress Toaster Oven
How to prepare…
1. Put two slices of french bread into the toaster oven and toast 1 side and then remove from toaster oven and place on plate, toasted side down.
2. Sprinkle cheese on both pieces of french bread and toast again, cheese side up.
3. Add a nice size piece of meat loaf to one slice of toast and put the other on top. Voila!
4. Enjoy!

We have been using the Panasonic Flash Xpress Toaster for a while now and love it. Why? As, empty nesters, it’s great to make sandwiches and heat up other small food items. It also doesn’t heat up your whole house. I mean, I definitely don’t want to get the oven hot just to make a meat loaf sandwich. Know what I mean? We also added aluminum foil to the tray to make it easier to clean. Easy peasy.
I also love that it preheats quickly and takes up very little of our counter space since we don’t have much to begin with. This would be perfect for someone with a small kitchen like ours or someone who likes to cook very little like me. 😉

I really like that you can remove the inner pot for dishwasher washing….so easy. Quick and easy cooking and clean up. I like using my slow cooker and can’t wait to try out all the features.

That is such a cool toaster oven! I love that it’s not huge. I don’t have a ton of counter space, and the toaster oven I have now is shoved on a shelf in another room where I forget it exists. The Multi-Cooker would come in really handy too!
