Did you know that you can make muffins with olive oil instead of vegetable oil for a healthier alternative? We made Caramel Spiced Pumpkin Muffins using Star Olive Oil that we purchased at Walmart instead of vegetable oil and they turned out really yummy.
Caramel Spiced Pumpkin Muffins
You will need the following ingredients…
1 cup caramel bits
1/2 cup Star Arbequina Extra Virgin Olive Oil
5 teaspoons pumpkin pie spice
3 cups all-purpose flour
3 cups sugar
2 teaspoons baking soda
1 teaspoon salt
1/2 cup orange juice
1 can (15 ounces) canned pumpkin
4 large eggs
To prepare the Caramel Spiced Pumpkin Muffins…
Preheat your oven to 350° F and insert your paper cups into a 12 muffin pan.
Next combine the flour, baking soda, salt and pumpkin pie spice in one bowl. In a separate bowl, combine the canned pumpkin, sugar, eggs, Star Arbequina Extra Virgin Olive Oil and orange juice and beat until just blended. Combine the ingredients from both bowls and the caramel bits and stir just until moistened. Fill the cups with your batter until 3/4 full and bake for approximately 30 minutes or until done in the middle. Cool completely and serve.
