You will need the following ingredients…

1 cup caramel bits
1/2 cup Star Arbequina Extra Virgin Olive Oil
5 teaspoons pumpkin pie spice
3 cups all-purpose flour
3 cups sugar
2 teaspoons baking soda
1 teaspoon salt
1/2 cup orange juice
1 can (15 ounces) canned pumpkin
4 large eggs

To prepare the Caramel Spiced Pumpkin Muffins…

Preheat your oven to 350° F and insert your paper cups into a 12 muffin pan.

Next combine the flour, baking soda, salt and pumpkin pie spice in one bowl. In a separate bowl, combine the canned pumpkin, sugar, eggs, Star Arbequina Extra Virgin Olive Oil and orange juice and beat until just blended. Combine the ingredients from both bowls and the caramel bits and stir just until moistened. Fill the cups with your batter until 3/4 full and bake for approximately 30 minutes or until done in the middle. Cool completely and serve.

  13. I use STAR brand Olive Oil too! I used the one for Vegetables tonight when I made potatoes – yum! It makes a perfect brown crust and they melt in your mouth at the same time. My fam would love these Muffins!

      Thanks! I know some people just skim a recipe before making it {I do}. It’s way easier to just look at a pic quickly and decide if you have the ingredients than it is to read a list of ingredients.

  23. I have been reading a lot about using olive oil in cooking and baking lately. In your experience, how does the taste of olive oil baked goods compare with vegetable oil baked goods?

      Honestly, I couldn’t even taste it. I have been using Olive Oil for a while, though, because of all of the health benefits to using it over the alternatives. But I don’t recall tasting a difference when I switched either.

    I used to make hundreds of pumpkin muffins at a restaurant I used to work at. They were very good but I never thought to add caramel. That would have made them great!

    I don’t bake but, I use olive oil for almost all my cooking. If you want to make the world’s best pork chops, put some olive oil in a skillet, get it hot lay in the pork chops and sprinkle with garlic salt, turn ’em over and sprinkle again. Done.
