Easy Slow Cooker Brunswick Stew Recipe
You will need..
1 large onion, chopped
1 celery rib {stalk}, chopped
1 large green bell pepper, chopped
1 cup frozen sliced okra, thawed
4 cups frozen cubed hash browns, thawed
3/4 pound barbecued pork, chopped {I used 1 pound}
1 cup chopped cooked chicken {I used 1 1/2 cups}
1 (14 1/2-ounce) can diced tomatoes, undrained
1 (15-ounce) can tomato sauce
1 (15 1/4-ounce) can whole kernel corn with red and green peppers, drained {We used plain canned corn}
1 (15 1/4-ounce) can lima beans, drained
2 cups chicken broth
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon Worcestershire sauce
Preparation
Boil the chicken until done – approximately 20-25 minutes.
While the chicken is cooking, cut up the celery, onion and green pepper.
When the chicken is done, cut it up and combine all ingredients in a 5 quart slow cooker. Cover and cook on HIGH for 6 hours and 30 minutes.
I hope that you enjoy this Brunswick Stew recipe!

Oh, guess I should have said. I’m leaning towards being a vegetarian, so I’ll leave out the chicken and use veg. broth.

My daughter is a vegetarian, too, so she didn’t eat any of this. Perhaps I will make it the you suggested way next time! Thanks! {don’t forget to leave out the BBQ, too}
