Guess what. It snowed here again. After going with out seeing even the teensiest of snow flakes all season until 2 or 3 weeks ago, now it seems like it snows every few days. It was fun but now am over it. And I am cold. So cold. So, if you are sick of the cold like I am, perhaps this Guinness Beef Stew Recipe, full of tasty stew beef and comforting vegetables, will help thaw you out.
Guinness Beef Stew Recipe
You will need…
1.25 pound of stew beef
4 large potatoes {peeled and cut into large chunks}
A few sprigs of Thyme
A few sprigs of Rosemary
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup chopped celery (approx. 2 stalks)
1 cup sliced carrots (approx. 3 medium carrots)
1/2 chopped onion
3 cups of beef stock (not broth)
1 can Guinness Draught Beer
To prepare…
First, add olive oil, salt, pepper and herbs to a stew pot.
Heat the stew pot on medium heat until oil begins to sizzle.
Next, add stew beef and stir until the stew beef is brown on each side.
Add Guinness, beef stock, and vegetables to the pot and stir together.
Change the stove setting to low and cook for 2 hours on low stirring every so often.
This stew is perfect to help you warm up after a cold day. Serve the Guinness Beef Stew in a bowl or on a plate. I suggest serving this with a dense bread to dip in the broth. You could also enjoy this hearty soup with a tasty grilled cheese sandwich, the perfect comfort food combination.

Oh beef stew is the best. You are totally missing out. And it's REALLY hard to screw up so it's great for people who like to cook but aren't master chefs.

You could either brown the meat like in the original recipe OR you could just throw all the ingredients in there together and cook it for 8ish hours {just guessing} on low. Of course, check it to make sure it's done first. Sometimes meat can take longer in a slow cooker.

Yummy, beef stew is one of my favorite cold weather dishes. I've never made mine in a crock pot but would like to try it.
Mine too. And with the crock pot, it seems like there is less work and less to wash.
