If you are anything like me, you love cooking with the slow cooker. I just think it’s so much easier to make a tasty meal in one dish than it is to dirty up every pot and pan that you have. With game season upon us, I really wanted to try out this Crock Pot Buffalo Chicken and Potatoes Recipe as it reminds me of hot wings. And who doesn’t love hot wings? We think this would be a fabulous new recipe for game day that requires very minimal effort.
Crock Pot Buffalo Chicken And Potatoes
Ingredients
2 large boneless chicken breasts {we used 3 medium} cut into 1 inch strips
1/3 cup Buffalo wing sauce {we used the generic, but will switch to Red Hot next time as we like it best}
1 can {10 oz} Cream of Celery soup {condensed}
6 cups frozen hash brown potatoes, thawed {we used the type cut into squares instead of shredded}
1 cup Ranch Dressing
1/2 cup shredded Cheddar cheese
1/2 cup crushed Corn Flakes cereal
2 tbsp butter, melted
3 green onions, chopped {these are optional}
Preparation…
1. Combine chicken and Buffalo sauce in a bowl and stir until the chicken is coated well. Place the chicken in the bottom of your slow cooker.
2. Combine soup, potatoes, cheese and dressing in a large bowl and stir well. Spoon this mixture over the chicken in the slow cooker.
3. Combine bread crumbs and butter in a small bowl and stir well. Sprinkle mixture over the ingredients in the slow cooker, evenly.
4. Cover and cook on low 6-8 hours or on high for 3 to 4 hours. We cooked ours on high for 3 hours and it turned out great. Slow cookers cook at different rates, though, so be sure your chicken is well done with no pink in the center before consuming. You should also be sure that the potatoes are tender, as well.
5. Serve with green onions sprinkled on top {optional}.
Our Thoughts
I adapted this recipe from Easy Everyday Slow Cooker Recipes by Donna-Marie Pye. Don’t worry if you don’t like your recipes very spicy. This one has just a little kick to it but nothing crazy. It turned out really well {especially the potatoes – yum}, but I would like to play around with it a little next time and double up on the chicken and buffalo sauce. I will probably also cut the chicken into 1 inch square pieces so that the Buffalo sauce can coat it more and I might even marinade the chicken in it for 24 hours before cooking. We like it spicy in our house. 😉
