Lime Cheesecake Recipe

I don’t know about you but I am over the cold weather. I am ready to go someplace tropical, or at least have a consistent warm front here. Well, I can’t control the weather but I can hide stay inside with a Lime Cheesecake and pretend I am someplace sunny, right? If you want to beat the cold with me, try out this yummy Lime Cheesecake recipe. I mean, this is another level yum. Prepare thy taste buds. 😉

Lime Cheesecake Recipe

You Will Need…

Crust
1 1/4 cups butter cookie crumbs
3 tbsp unsalted butter, melted

Filling
1 packet {1/4 oz/7.5 g} powdered unflavored gelatin
1/4 tsp grated lime zest
1/2 cup freshly squeezed lime juice
3 packages {each 8 oz/250 g} cream cheese, softened
3/4 granulated sugar
1 tsp vanilla extract
1 cup whipping {35%} cream, whipped

Decoration
whipped Cream {We use the kind in the can}
1/4 tsp grated lime zest

To Prepare…

Crust
1. In a bowl, combine cookie crumbs and butter {we used a blender to make this easier}. Press into bottom of cheesecake pan and freeze.

Filling
2. Sprinkle gelatin over lime juice in a small saucepan and let stand for 1 minute. Stir over low heat until gelatin is completely dissolved. Set aside to cool slightly.
3. In a mixer bowl fitted with paddle attachment, heat cream cheese and sugar on medium-high speed until very smooth, for 3 minutes. Slowly mix in dissolved gelatin. Stir in vanilla and lime zest. Fold in whipped cream by hand.
4. Pour over frozen crust, smoothing out to sides of pan. Cover with plastic wrap and refrigerate for at least 6 hours before decorating and serving. Run a hot knife around edge of pan to loosen.

Decoration
5. Ice top of cake with whipped cream topping or pipe rosettes around top of cake, if desired. Sprinkle with lime zest.

What’s Your Favorite Type Of Cheesecake?

I have tried Key Lime Cheesecake before, but never Lime Cheesecake. Honestly, I can’t tell a lot of difference. However, of all the cheesecake recipes I have tried, this just might be the best. It’s at least very, very close to the top.
