Diabetic Friendly Avocado BLT Recipe #sponsored

It’s been so warm outside lately that it has me in the mind for spring. All things spring. And what is perfect for spring? Lovely sandwiches full of garden fresh veggies. This Avocado BLT Recipe is a super simple recipe. It’s also a diabetic-friendly sandwich that comes together in just minutes.

Avocado BLT Recipe

You Will Need…
1 ripe medium avocado, halved, pitted and peeled
1 1/2 to 2 tablespoons lemon juice
8 slices reduced-calorie whole-wheat bread, toasted
1/4 cup chopped fresh cilantro
1 large tomato, cut into 8 thin slices
1/4 teaspoon black pepper {we used a little more than this}
1/4 cup very thinly sliced red onion
8 pre-cooked bacon slices {we used turkey bacon}
4 medium romaine leaves

To Prepare…
1. Mash the avocado with the lemon juice in a medium bowl and spread equal amounts on top of 4 of the bread slices.
2. Top with the remaining ingredients, except the bread slices, in the order listed. Top with the remaining bread slices.
3. Cut in half, if desired. Serve.

Since lemons are something that we often use, but don’t often think about buying at the store, we like to get lemons sent to our house. It’s just so convenient. You can get super fresh lemons sent straight to your door in a cute green box with Limoneira.

We also really love the T-Fal Ingenio Spreader Spatula. It makes spreading of butter, dips, icing on cakes, etc so easy. Plus, it’s not metal, so you don’t have to worry about getting too overzealous and tearing your bread. We find that this tool is also great for lifting a piece of pie out of the pan if you don’t have a pie spatula. It’s strong, doesn’t bend and drop your pie, and you don’t have to worry about it scratching your non-stick cookware since it’s plastic coated. So it’s super handy!

Finally, if you aren’t able to finish your Avocado BLT Sandwich, you will need something super airtight to store it in to keep all of those veggies fresh. We like Debbie Meyer GreenBoxes™. You guys knows I like things simple and these are so versatile. They are BPA-free, reusable, microwave and top-rack dishwasher safe, stackable and nestable, and proudly made in the USA.

What’s Your Favorite Variation On The BLT?

I hadn’t tried avocado on a BLT before trying out this recipe and, I have to say, it really steps it up a notch. Do you have other suggestions of things to add to a BLT? How do you like yours? Feel free to share your ideas in the comments below.
