My husband and I recently went on a cruise where we tried Opera Cake for the first time. We wanted to make it at home, but dang it’s tough. So, we decided to adapt several recipes that we found online to make a SNICKERS® Almond Opera Cake recipe that takes way less time to make and a lot less stress. We hope you enjoy. 🙂

Easy SNICKERS Almond Opera Cake Recipe

To Prepare The Sponge Cakes…
Every Opera Cake recipe that we found called for you to make the Sponge Cake from scratch. Um, no. Go buy the single serve sponge cakes that you use for strawberry shortcakes at the store. We bought 6 packs of 3 each.

Hold the sideways and cut the rounded part off the top. You should end up going from what looks like a bowl to a flat disc. Tada.

Coffee Syrup Ingredients…
1/4 cup sugar
1/4 cup coffee {we use Honduran coffee}
1 tablespoon chocolate extract

How To Prepare Coffee Syrup…
Combine sugar, chocolate extract and coffee in a small saucepan. Cook and stir constantly over medium heat until sugar is dissolved and it starts to boil. Reduce heat and simmer, uncovered, for 5 minutes.

Coffee Buttercream Ingredients…
1/2 cup sugar
2 tablespoons water
3 egg yolks
1 tablespoon coffee {we use Honduran coffee}
1 teaspoon vanilla extract
3/4 cup butter

How To Prepare Coffee Buttercream…
You will need a heavy saucepan for this step. Combine sugar and water, bringing to boil. Remove from heat and gradually stir half of the mixture into the egg yolks. Pour this mixture back into the saucepan and cook and stir for 2 minutes on medium heat. Remove from heat again and stir in coffee and vanilla. Allow to cool.

In a large mixing bowl beat butter on medium speed until fluffy. Continue beating while adding the cooled egg yolk mixture until combined. You may have to cool this mixture in the refrigerator until it can easily be spread.

SNICKERS Almond Ganache Ingredients…
1/3 cup whipping cream
2 3.23 ounces SNICKERS Almond bars {melted in the microwave}

How To Prepare SNICKERS Almond Ganache…
Bring whipping cream to a boil in a small saucepan over medium heat. Remove from heat and pour in the melted SNICKERS Almond bars. Do not stir, but let stand for 5 minutes. Then stir until smooth and let cool another 15 minutes.

How To Prepare The SNICKERS Almond Opera Cake…
Place one sponge cake on a serving plate. Brush with 1/3 of the Coffee Syrup. Spread with 1/2 of the Coffee Buttercream.

Place another sponge cake on top of the previous one. Brush with 1/3 of the Coffee Syrup. Spread with half of the SNICKERS Almond Ganache.

Top with the final sponge cake. Brush over the rest of the Coffee Syrup. Spread over the remaining buttercream.

Chill for 1-2 hours or until firm.

Spread with the rest of the SNICKERS Almond Ganache. Serve.
