The Goodness Of Fall Contest

How would you like to win a trip to Napa? Right now, contestants in The Goodness of Fall Contest will create at least 3 unique fall dishes highlighting 3 of the seasonal ingredients that are used on the new Fall Seasonal Menu. 5 recipes will be chosen and submitted the judges panel where they will choose one as the Grand Prize Winner!

The Fall Seasonal Ingredients are: Flank Steak, Candied Walnuts, Brussels Sprouts, Red Quinoa, Kale, Chinese Broccoli, Asian Mushrooms, Daikon Sprouts, Prawns,  Green Apples, Fresno Peppers, Scallions, Butternut Squash and Corn

Contest Panelist include: Philip Chiang, Cofounder of P.F. Chang’s; Yuji Iwasa, Head Development Chef at P.F. Chang’s; Mary Melton, Director of Beverage at P.F. Chang’s; and Jennifer Chong; a prominent blogger partner.

The Grand Prize Winner will win a trip for two to Napa for a two-night stay in the spring of 2014. The Grand Prize also includes an exclusive visit to a Napa Valley vineyard guest house. There, the Grand Prize winner will meet judges Philip Chiang and Yuji Iwasa. The judges will be cooking some of their favorite dishes! Beef and Broccoli Stir Fry Recipe

Here is the recipe that we came up with using the fall items suggested for this contest to give you some ideas to start with. 🙂
You will need:
One package of P.F. Chang’s Beef and Broccoli Meals for Two
2 7 oz cans of baby corn
2 bunches of scallions {chopped}
1 24 oz freezer package of Brussels Sprouts
1 16 oz package of brown rice uncooked
1 5 oz container of Shitake Mushrooms
Olive Oil – just enough to coat the bottom of a pan
Butter, to taste
Soy Sauce, to taste
First, cook the rice per the directions on the package. Some rice takes about 45 minutes to cook, so start this early. While cooking the rice, put a little olive oil in a wok or saucepan and add the vegetables, heating them on low low until tender. While cooking, add a little butter, to taste.
In another pan, heat the P.F. Chang’s Beef and Broccoli according to its directions. Drain and rinse the rice {if necessary – it was not for our package} and mix the vegetables and rice in one wok or saucepan – leave the rice and vegetables on low {stirring every few minutes}. In a pot, boil the Brussels Sprouts in a quarter cut of water with two tablespoons of butter. Ours took about 10 minutes to cook.
Plate the vegetable stir fry mix and the P.F. Chang’s Beef and Broccoli and Brussels Sprouts on the side. Serve with Soy Sauce.
