It’s summer. And you know what teens love to do in the summer? Not stay home, that’s what. My daughter, Amber, is always anxious to get out the door to her next fun time with her friends. But we still need to make sure that she has a tasty and nutritious meal in her belly – and Tyson helps us do just that.

Cheesy Enchiladas For A Teen On The Go

When Chatty Cathy gets a text, she doesn’t have time to play. It’s time for a fast meal so she can get out the door. STAT!

In our home, we are all big fans of Mexican food, especially enchiladas. We like to make our own version with flavored wraps. We like Sun-Dried Tomato Basil and Garden Spinach Herb. Enchiladas are super easy to make, which might be what Amber likes most. You can make them a variety of ways, but Amber likes to make hers by laying out one of the flavored wraps on a plate, adding a few Tyson Chicken Fries and cheese {she uses a variety of different cheeses, depending on what we have on hand} to it, rolling the whole concoction up, and adding more cheese to the top. Then she throws it all in the microwave for about a minute or two and basically runs out the door with it! Nice to see you, too, Amber. 😉

Chicken Enchiladas For The Slightly Less On The Go Parents

Jay and I like to live at a bit of a slower pace when possible, so we like to enjoy our enchiladas a bit differently. We use the same wraps, though we sometimes go for plain, and we sometimes add different ingredients besides just the Tyson Chicken Fries and cheese. I especially enjoy onions and jalapenos in my enchilada and Jay really likes onions and hot sauce. We both love salsa, diced tomatoes and habaneros and I also love sour cream. We really just like to change it up.

Make Your Own Refried Beans

We like to make our own refried beans. If you would like to try out our recipe {that goes great with enchiladas} then you will need…

  • 2 cans pinto beans {drained and rinsed}
  • 1 cup chicken broth
  • 1 cup cheese
  • 2 tsps garlic salt
  • 1 tsp garlic pepper
  • 1 1/2 tsps chili powder
  • 1 tsp hot sauce
  • 1/2 large onion
  • Spray Pam or Olive Oil

 

Preparation:

Spray your pan with Pam and cook the onions first until they are tender on medium heat.

Add beans and cook while slowly adding about half of the broth.

Add the rest of the ingredients except for the cheese and mix thoroughly.

Mash the beans with a plastic or wooden utensil. Add more broth as needed. When you have the beans the consistency that you desire, add the cheese and mix thoroughly heating until the cheese is melted.

    • I think they are better if you make them yourself. There is something that I just don't love about the ones you get in a can.
