You know, I just love Mexican dishes. In particular, I love Queso. So, when Red Gold offered us the chance to review some of their tomato products to try out some tasty queso, we were definitely up for it! Check out this Queso recipe we made with Red Gold Tomatoes and Green Chilies.

Queso Recipe With Red Gold Tomatoes and Green Chilies

One of the things that we enjoy eating most is chips and dip. More specifically, tortilla chips and either salsa or queso. There was a great queso recipe that was included on Red Gold’s can of Queso Ready Diced Tomatoes and Green Chilies, so we used it to create some fresh queso dip! I gotta tell you, this recipe was magnificent! It’s the best queso dip that I have ever had! And it was very easy to make!

This Queso recipe involved one pound of Velveeta Original Cheese, and one 10 ounce can of Red Gold Queso Ready Diced Tomatoes and Green Chilies. There are two ways you can prepare the queso, either in the microwave or on the stove top.

Queso Recipe For The Microwave

The microwave instructions are to combine the Red Gold Queso Ready Diced Tomatoes and Green Chilies and Velveeta Original Cheese in a microwave-safe bowl. Microwave on high for 5 minutes, stirring occasionally. Then remove and stir the queso well, then cook an additional 2 minutes until the cheese is completely melted. Allow the queso to cool for a few minutes, then serve with tortilla chips or vegetables. We decided to make ours on the stove top.

Slice up the Velveeta and heat in on the stove top on low.
Add the Red Gold Diced Tomatoes and Green Chilies to the melting Velveeta.

Easy Stove Top Queso Directions

For the stove top, combine the Red Gold Queso Ready Diced Tomatoes and Green Chillies and Velveeta Original Cheese in a large saucepan. We decided to start melting the Velveeta before we added the Red Gold Diced Tomatoes and Green Chilies because we thought that would be easier. Stir the ingredients over low heat until the cheese is melted, then serve with tortilla chips or fresh vegetables. You can even also add a half pound of cooked ground beef for something a little different, if you like.
