Cheesecake is perhaps our favorite type of cake in this household. So, naturally, we love trying new cheesecake recipes when we can. If you are looking for a cheesecake that is not as heavy as many of the more traditional types, then we think you will love this one. It requires less cream cheese and comes out similar to a pie, but still holds together nicely. Oh, and it tastes so good. We think this is the perfect cheesecake for spring.
Lemon Cheesecake Recipe
You Will Need…
Crust
2 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
Filling
1 box {4-serving size} lemon-flavored gelatin
1 cup boiling water
1 package {8 ounce} cream cheese, softened
1 cup granulated sugar
1 1/2 cups evaporated milk
1 tbsp freshly squeezed lemon juice
1 tsp vanilla extract
To Prepare…
1. Crust: In a bowl, combine graham cracker crumbs and butter. Press into bottom of spring form pan and freeze.
2. Filling: In a small bowl, dissolve gelatin in boiling water. Set aside to cool completely.
3. In a mixer bowl fitted with paddle attachment, beat cream cheese and sugar on medium-high speed until very smooth, for 3 minutes. Slowly mix in dissolved gelatin. Mix in evaporated milk, lemon juice and vanilla.
4. Pour over frozen crust, smoothing out to sides of pan. We recommend using a T-Fal Ingenio Spreader Spatula for this step. Cover with plastic wrap and refrigerate for at least 6 hours before serving.

Helpful Tips
1. Keep lemons on hand all the time with fresh, Limoneira Lemons shipped directly to your home.
2. The original recipe calls for lining a pan with foil {but we used a spring form pan instead. Either way, you can cut the Lemon Cheesecake in even slices with the Debbie Meyer V-Shaped Cake Cutter. Now, since this “cake” is more like a pie, we don’t recommend lifting the cheesecake out of the pan with the cake cutter, use the spatula instead.

I have never tried a lemon cheesecake, but this looks so good. I bet the lemon flavor really goes well with a traditional cheesecake. I love that this variation sounds lighter and less dense than the cheesecakes I am used to.
