It’s been so warm outside lately that it has me in the mind for spring. All things spring. And what is perfect for spring? Lovely sandwiches full of garden fresh veggies. This Avocado BLT Recipe is a super simple recipe. It’s also a diabetic-friendly sandwich that comes together in just minutes.

Avocado BLT Recipe

You Will Need…
1 ripe medium avocado, halved, pitted and peeled
1 1/2 to 2 tablespoons lemon juice
8 slices reduced-calorie whole-wheat bread, toasted
1/4 cup chopped fresh cilantro
1 large tomato, cut into 8 thin slices
1/4 teaspoon black pepper {we used a little more than this}
1/4 cup very thinly sliced red onion
8 pre-cooked bacon slices {we used turkey bacon}
4 medium romaine leaves

To Prepare…
1. Mash the avocado with the lemon juice in a medium bowl and spread equal amounts on top of 4 of the bread slices.
2. Top with the remaining ingredients, except the bread slices, in the order listed. Top with the remaining bread slices.
3. Cut in half, if desired. Serve.

  3. I have never tried I will Cotto on a BLT but I think I will need to. This looks so good. We do a BLT it at least once a month for dinner and I think I’m going to try it with avocado on it next time.

    I usually make bacon, lettuce and tomato sandwiches, but this looks really good. I bet the onion with avocado tastes really good as well. I actually prefer Turkey Bacon over regular bacon it is so good. I can’t wait try this!

  17. Club sandwiches and BLT’s are my favorite type of sandwiches. Adding in avocado puts it over the top, I love avocado (I’m eating guac as I type.) and it is really good for you.
