It’s been so warm outside lately that it has me in the mind for spring. All things spring. And what is perfect for spring? Lovely sandwiches full of garden fresh veggies. This Avocado BLT Recipe is a super simple recipe. It’s also a diabetic-friendly sandwich that comes together in just minutes.
Avocado BLT Recipe
You Will Need…
1 ripe medium avocado, halved, pitted and peeled
1 1/2 to 2 tablespoons lemon juice
8 slices reduced-calorie whole-wheat bread, toasted
1/4 cup chopped fresh cilantro
1 large tomato, cut into 8 thin slices
1/4 teaspoon black pepper {we used a little more than this}
1/4 cup very thinly sliced red onion
8 pre-cooked bacon slices {we used turkey bacon}
4 medium romaine leaves
To Prepare…
1. Mash the avocado with the lemon juice in a medium bowl and spread equal amounts on top of 4 of the bread slices.
2. Top with the remaining ingredients, except the bread slices, in the order listed. Top with the remaining bread slices.
3. Cut in half, if desired. Serve.
Since lemons are something that we often use, but don’t often think about buying at the store, we like to get lemons sent to our house. It’s just so convenient. You can get super fresh lemons sent straight to your door in a cute green box with Limoneira.
We also really love the T-Fal Ingenio Spreader Spatula. It makes spreading of butter, dips, icing on cakes, etc so easy. Plus, it’s not metal, so you don’t have to worry about getting too overzealous and tearing your bread. We find that this tool is also great for lifting a piece of pie out of the pan if you don’t have a pie spatula. It’s strong, doesn’t bend and drop your pie, and you don’t have to worry about it scratching your non-stick cookware since it’s plastic coated. So it’s super handy!

I often use mashed avocado on sandwiches instead of mayo and cilantro is one of my favorite herbs. I’ll need to make these for my family. I know they will enjoy this spin on a BLT.

I have never tried I will Cotto on a BLT but I think I will need to. This looks so good. We do a BLT it at least once a month for dinner and I think I’m going to try it with avocado on it next time.
